How do I change the value of many records at once?

If you use a server, backups are on a "schedule".  You can run a backup with the files "live" using FileMaker Server Admin.  You could also just do it first thing in the morning since you have a current backup from the night before.  If you don't use a server, get on the "host" machine and run a backup by clicking the backup button (above)

Click "List Appointments" in the Calendar

Find the date range

Click on Find and enter the date range.  Then click on Perform Find.

Find again on "Tuesday" and choose REQUESTS (at the very top) > Constrain Found Set

In the previous step you found ALL appointments after 1/15/2012.  However you want to narrow down your records to only Tuesdays.  To do that you must perform a second find.  Click on "Find" again and choose Tuesday in the day field.  When performing a second find within an already found set, you must use "constrain found set" rather than perform find.  

Change the value and choose RECORDS (at the very top) > Replace Field Contents

1. Change Dr Cutler to Dr Bateman on one of the records.

2. Records > Replace Field Contents to change the remaining records in the list.

Make sure the number of records and the field looks right and click "Replace"
